for the chocolate topping, you can put a piece of chocolate in a madeleine bakeware, put it on the oven (turned off but still hot), until the chocolate melts , place your madeleines on the melted chocolate, and let them in the mould in a cool place until the madeleine detaches itself from the mould. and you will obtain this beautiful chocolate topping.
